The difference worth knowing is fibre. Plain cotton starts a little crisp and softens over a season of washes. A linen-cotton blend is less absorbent in the hand but far quicker to let go of water, which is the whole job, and the linen leaves a slight slub in the cloth.

So: cotton if you want a cloth that improves, linen-cotton if you want a glass dried without anything left on it. These are the ones that replace whatever is already fraying on the oven rail.
